Baby Back Ribs are cut from where the rib meets the spine after the loin is removed. The upper ribs are called baby back ribs, but not because they come from a baby pig! They're called baby because they're shorter when compared to spare ribs. Baby Back Ribs are very meaty, tender and lean, but also does not have the hard breastbone and chewy cartilage that spare ribs have, making this very enjoyable and also meatier. That's why they're so high in demand! Both baby back ribs are great when cooked low and slow to become nice and mouthwateringly tender. They are great for smoking, braising, grilling, or can be cooked in the oven. The ribs also take well to spice rubs and sauces. Compared to spare ribs, baby back ribs cooks quicker so a recipe which would normally take spare ribs 2.5 to 3 hours to cook, only takes baby back ribs 1.5 - 2 hours making this a super convenient cut if you don't have much time for cooking. Baby back ribs are great for American style grilling and smoking but is also wonderful in Korean recipes such as Galbi (Korean BBQ) or Asian/Chinese soups and stews that feature ribs as the main star of the dish such as Bak Kut Teh soup or Penang curry. Our baby back ribs come from healthy hogs that are raised in a clean and open environment, with no antibiotics or growth hormones administered to them. Our pork is antibiotic and growth hormone free.
