New Zealand pasture-fed brisket injected with a mix of rosemary, oregano thyme and brine. Covered with a paste of red chili, sweet paprika and pink pepper. It's then vacuum wrapped and slowly cooked sous-vide for 20 hours. Served with asparagus and a herb infused sweet potato mash.
