Rosemary marinated pasture-fed chicken thighs seared with sea salt and black pepper in clarified grass-fed New Zealand butter. Cooked sous-vide at 65C for exactly 1 hour.
Served in a Cacciatore stew. Cacciatore means "hunter" in Italian. It's made of organic tomatoes, onions, carrots, mushrooms, capsicum, free-range chicken broth and a bit of dry red wine.
Ingredients: Pasture-fed chicken thigh, tomato, carrots, red onions, chicken broth, dry red wine, swiss brown mushrooms, garlic, fresh rosemary, capsicum, parsley, basil, pitted olives, clarified grass-fed butter
Oven(recommended): Remove lid and place in oven at 145-155C. Bake for about 10-15 minutes.
Microwave: Place in Microwave on high for 4-5 minutes. Stir and cook for 3 minutes.
