We absolutely LOVE this Irish inspired dish! Our New Zealand Rump is brined for 5 days in a lovely aromatic concoction of earthy flavours of garlic, black pepper, mustard seeds, coriander, all-spice, ginger, cinnamon, cloves and let's not forget. The bay leaf! Once brined for 5 days, the rump is simmered low and slow with a few pickling spices until mouthwateringly tender and soft. The Corned Beef is the star of the show so we didn't want to add over-powering sauces or flavours to this dish, so we paired it beef with traditional accoutrements such as brussels sprouts, potatoes, broccolini and carrots and a side of organic grain mustard. Once you've had your first until it is over, you'll have been taken by the beef and delicately and tenderly shown the ways of flavorful meat love. Beef is very tender and perfectly cooked. The artichokes rounded out the dish really well.
