Also known as Huevos Rotos (Broken Eggs) in Spanish, this is an everyday comfort food staple in the Spanish cuisine. Although it looks like a breakfast dish, Spaniards actually more commonly eat this dish as a lunch or a dinner.
Our Paleo take on this nostalgic dish are shredded potatoes that has been treated with love in the frying pan, giving it a crisp texture which compliments the runny creamy yolk of the duck eggs. Of course, spice is the life of variety (did I get this quote wrong?) and the creamy goody is contrasted with the mild spicy notes from the smoked paprika and chorizo sausages. This is an easy, relaxed meal great after a stressful day to start a calm and relaxed evening.
