Salmon cooked en papillote, which means wrapped in a packet of parchment (or foil), is a dramatic way to make perfectly cooked salmon. Of course, the name Salmon en Papillote sounds alluring but we don't want people to think this is a fancy, complicated dish. It's salmon done right, with subtle aromatic notes from the accoutrement such as the jalapenos, the pickles and of course; bacon :-)
Enjoy this dish with a glass of white wine; the acidity of the wine compliments the fatty salmon very well.
