Although the name sounds like it was invented in Ukraine, this dish was actually invented by a Russian chef who wanted to market it for Russian restaurants in Europe and North America. Very similar to Wiener Schnitzel and Gordon Blue, our take is a chicken breast that has been tenderized and butterfly'ed, before having a fragrant herb butter within the pocket of the breast, then breaded with almond flour and smoked paprika. Instead of the usual fare of mashed potatoes, we serve ours with roasted bell peppers, brussel sprouts and coffee-cured pineapple which add a much welcome contrast to the savoury Chicken Kiev.
