Bacalao, or cod, is one of the staples of Basque cooking. In this recipe, 300 grams of wild-caught pacific cod is gently stir-fried, then simmered in a seafood broth and tomato sauce. It's a hearty and warming stew. Pacific cod is a real nutrient-dense food that can provide you with many health benefits. In addition to being a good source of protein, vitamins and minerals, it is also a good source of omega-3 fatty acid. A neat twist we did was to add baked sliced potatoes to the same broth, which causes the potato to take on the flavour of the dish very similar to fondant potatoes. When we did the food tasting, we licked our plates clean thus introducing this dish to the "clean plate club". Ingredients: Wild Cod Loin, Dutch Bintje Potatoes, Onion, Fish Broth, Boundary Bends Extra Virgin Olive Oil, Almond, Garlic, Dried Chili, Parsley.
