Paleo Pancakes, light and fluffy! Our sweet and soft Paleo Pancakes are a delicious Saturday brunch choice for those on a grain-free, gluten-free and dairy-free lifestyle. Our take on this American breakfast staple (sometimes called hotcakes or flapjacks) features 2 styles of butter and wild raw honeycomb. 2 Kinds of butter? You exclaim. Yes! A knob of butter from New Zealand Pasture-raised, grass-fed cows and Beurre Noisette, browned butter with nutty notes. These lightly sweet Paleo Pancakes are made with almond flour, banana, eggs and tapioca starch resulting in a very fluffy, soft & chewy texture that holds to your fork when pairing it with the fruits, honey or the 2 kind of butters in this meal (it won't disintegrate into a mush like you usually see happen to store-bought gluten-free & rice-based pancakes). The kicker? We use wild raw honeycomb! Why wild and raw? Most commercially available honey that you find in a supermarket is actually not 100% pure honey with pollen. To increase their profits margins, many of the corporations dilute or add high-fructose corn syrup and other sweeteners to their already cheap and unethical honey imported from China that is also usually tainted with antibiotics and crazy preservatives (pollen is a natural preservative and keeps honey shelf-stable). So good! I hope we will see them more regularly in the menu. Seriously- my favorite pancakes ever! The fruit tasted better than normal too! And the honey comb was awesome! Loved it!
