Our grass-fed lamb tenderloin (also known as fillet) is cut from the side of the lamb by removing the entire muscle in one piece near the underside of the short loin cut. This area of the lamb does very little work meaning grass-fed tenderloin has very little fat and is one of the most tender cuts of lamb. The flavor profile of grass-fed lamb tenderloin is delicate and be suited to dry cooking methods to help retain the juiciness within the lamb tenderloin. Approx 5-8 lamb tenderloin per pack. All our lamb is 100% grass-fed and grass-finished, antibiotic and synthetic growth hormone-free.
