Chipotle Pulled Beef Brisket

Properly done chipotle-flavored meats are not easy to find in this part of the world. So we started from scratch, making the chipotle sauce in adobo in house, and then taking grass-fed, New Zealand brisket, slow cooking it in our chipotle til it's tender enough to shred with a fork. The instant it's ready, we spoon it into 300g tubs and flash freeze to -40c. That means all you have to do is pull out a tub, defrost (either in the fridge/countertop or microwave on defrost setting), and heat it up. This can be done in a microwave or in your oven at about 150c for 10 minutes. Great to have on hand for an quick, easy, and delicious dinner. As always - no added sugars, preservatives, or cheap oils. Pro tip: If you want to get that golden brown char on the edges, crank up the heat in your oven to around 200c and give the meat an extra 2 minutes in the oven at this temperature. Ingredients: Grass-fed NZ beef brisket, house-made chipotle sauce in adobo, green capsicum, white onions, garlic, tomatoes, jalapeño chili, cumin, paprika, oregano, extra virgin olive oil, white wine vinegar.
