The butt tender is the boneless portion of the tenderloin muscle that remains in the sirloin butt, after removal of the shortloin. Translation: After a bit of trimming, you can cut yourself some fantastic tenderloin steaks from this cut. Great value for money. Great short video on how to trim this cut on Youtube HERE. The trim takes about 10 minutes and you end up with 5-7 (or more) tenderloin-quality steaks plus some usable trimmings. See the pics for our recent home-trimming job on this cut! Once cut into steaks, cook like you would any other tenderloin, Can also be cooked as a fantastically tender roast. Sold by weight!
