Milk kefir is a super probiotic-dense beverage with a consistency between milk and yogurt. There are between 40-60 varieties of gut-boosting live probiotics in milk kefir, with a probiotic density of around 4-5x a typical yogurt. For those keeping score - that’s around 2.3 trillion CFU, or colony forming units, of probiotic bacteria in a cup of kefir, versus 500 billion in a cup of yogurt. Say hello to my little friend(s)! Kefir has been produced and consumed for thousands of years in Eastern Europe, where tribes in the Caucasus mountains would ferment goat and cow milk in leather bags. It’s made by adding kefir grains to milk - note, these are not actual grains, it’s just the name given to the particular strain of bacteria which produces kefir when introduced to milk. Shelf life is about 7-10 days unopened (or one week after it has been opened) and kefir must be kept refrigerated.
