Rosacker, "Field of Roses", is among the most celebrated of Alsace--2019s Grands Crus vineyards, with descriptions of its wines dating back to 1483. It owes its name to the wild roses, which grow in abundance around the edge of the vineyard. The limestone soils here produce Rieslings that are bone-dry yet which have a rare richness and mouth-filling texture. Fine, round but complex, mineral wine of great vitality, finesse and lingering salinity, from limestone soil. Ideal wine for vegetarian dishes with light or no sauces, in addition to seafood and chicken. When looking for food pairings, look for simple fish, chicken, or pasta dishes that have some acid to them but avoid stronger sauces like anything tomato-based.
