Whole pasture-fed capon chickens from Khao Yai. Suitable for 3-4 adults. Roasted to perfection by our chefs and immediately flash frozen. You simply need to re-heat in your oven (full re-heat instructions are included) for a foolproof holiday dinner! What's a capon chicken? Capon is a special type of chicken, bred to make the meat more flavorful than a chicken as well as a turkey, with tender and juicy meat that is void of any gamey taste. Capon chickens are much bigger and have more meat than normal chickens which makes for a more tender, flavorful meat that is a delight. Compared to rooster meat, which can be quite gamey, capon meat is tender and flavorful. It is full-breasted, relatively fatty, keeping what could become dry white meat nice and moist as it cooks, and has a high proportion of white meat (32.7 grams of protein!) Capons are well-mannered birds and can be safely raised in the same areas as other roosters without the fear of feathers flying (and bruised meat)! They are also less energetic than other poultry which helps their meat to stay tender. This poultry is considered a luxury and during the early twentieth century, the capon was the chosen bird for Christmas feasts. Traditionally, capons are roasted following the same recipes for roasting a regular chicken but due to its larger size, the cooking time will need to be adjusted to be slightly longer. It’s also great for braising such as the classic French dish, Coq Au Vin. You might worry that the meat won’t hold up but we assure you, they can handle a good braising. When we say that our capons are pasture-fed, we mean it. Often free-range is an empty term, but these chickens have access to huge expansive fertile areas to roam with lots of food to be found. Our capons are raised free of antibiotics and growth hormones.
