Lime Ginger Mint Kombucha is made from a certified organic Green tea base, natural spring mineral water, probiotic Kombucha culture, certified organic sugar, certified organic limes, certified organic ginger, certified organic mint, raw natural honey and himalayan salt. --- Sanctuary Natural Farm was established in 2011 on ten acres of organic soil in Chiang Rai, the most Northern Province of Thailand. We share our small family farm with many varieties of animals, fruits, herbs and vegetables. All of our products are hand made, in small quantities, with personal attention. As a natural farm we do not use any chemical pesticides, synthetic fertilizers, hormones or antibiotics. Kombucha Tea is an ancient treasure with recorded health benefits for over 2000 years. It is known as the "Elixir Of Long Life" Sanctuary Kombucha is made from a selection of certified organic base teas that we freshly brew and primarily ferment with a probiotic Kombucha Culture known as a SCOBY(Symbiotic Culture of Bacteria and Yeast). Depending on the flavour, we then add certified organic fruits, vegetables and herbs which are fermented a second time. This delicate process can take over one month to complete. As organic farmers, its important for us to support local and sustainable organic agriculture in Thailand. We freshly press all of the locally sourced fruits, herbs and vegetables in our Kombucha micro brewery. We try to use locally sourced and certified organic teas, fruits, herbs and vegetables from farmers in Thailand whenever possible. Because our Kombucha is raw and unpasteurized, the live bacteria continues to ferment in the bottle in a process known as bottle conditioning. This process creates the natural carbonation which occurs as a byproduct of natural fermentation. We do not add any CO2 gas which is found in other carbonated products like soda or many beers. As a result, the levels of carbonation can vary based on storage temperatures and the amount of time the Kombucha ages in each bottle.
