Born in the heart of the Alps, Tomme de Savoie is rooted in the history of the Duchy of Savoy since the medieval time. It originated in the valleys of the Maurienne and Tarentaise, Bauges and Chablais. Tomme de Savoie is named after the Savoy dialect "Toma" which means "cheese made in alpine," and each farmer individually produced its own Tomme. Back in the day, this was their afternoon snack. Aged on wood planks for 10 weeks, and hand-turned every 2-3 days. Tasting notes: Tomme de Savoie is covered with a suede-like, gray/brown rind that is frequently dotted with patches of yellow, red and white-colored mold.
