Most goat cheese has that "barnyard" funk because the milk sat in a tanker for days. Meredith Dairy is a family-run farm in Victoria where the founders (Julie and Sandy, who is a vet with a PhD in goat nutrition) process the milk the same morning it's collected. This keeps the flavor delicate and creamy rather than sour or "dusty." Grains grown on the farm are used by the dairy animals, straw is used for bedding, cheese whey is fed to beef cattle and animal manure is returned to the soil as fertilizer.
