These whole mud crabs (Scylla serrata) were wild-caught in the mangrove forests of Madagascar. Under strict government guidelines they are sustainably caught only 9 months of the year above the minimum size of 11cm in width. The meat tastes amazingly fresh! You can cook the entire crab, or for just the meat our paleo chefs recommend to hand-pick the meat with a small spoon to get up to 200 grams of crab meat and to cook the meat at a low temperature such as sous vide. When I tried it the taste and the freshness really blew me away.
