Because of the unique, cliff-like topography of the Andaman that makes deep water fishing more accessible, our fishermen are able to catch many varieties of abundant seafood from their short 10-mile trip Long-Nose Emperor has a mild, slightly sweet flavor, low oiliness and moist, firm flesh with large flakes, which makes the fish extremely versatile and easy to cook. Steam, poach, deep-fry, pan-fry, stir-fry, bake, braise, grill, barbecue--you name it. Our 2 favorite ways are in coconut milk-base curry, and refreshing ceviche.
