Every morning, our fisherman takes his small boat out to the ocean and return within a couple of hours fishing for wild red snapper. Because of the unique, cliff-like topography of the Andaman that makes deep water fishing more accessible, our fishermen are able to catch many varieties of abundant seafood from their short 10-mile trip The particular species of Trevally (ปลากะมง) is known for its versatility. A lot of restaurants dry-age them to serve as raw sashimi (if you're into naturally strong fish taste) but they are just as delicious cooked. They can be pan-seared, steamed, added in spicy soups; the list is pretty much endless! The ones we get in particular is treated with a technique called "ikejime" by local fishermen, which helps preserving their extra clean and flavorful taste.
