We make this ground beef in house from 50% topside and 50% Brisket Beef. We grind the whole black angus beef cuts and pack them in vacuum bags without adding anything to it except for 5ml of our single estate EVOO. The topside and brisket we use comes from Prime Steer Silver Fern cattle, which are of course pasture-fed. No added fat from the organs or other parts of the cow.
