Hallow Bee Honey (น้ำผึ้งโพรง หินลาดใน) is cultivated by Hin Lad Nai community of Pgakenyaw people where they live in harmony and care for over 10,000-Rai (around 4,000-Acre) of forest. Wild Hallow bees make their hives in trees, just like the namesake. These bees specialize in collecting pollen from various types of wild flowers and herbs, making mixed deciduous forest (ป่าเบญจพรรณ) their perfect habitat. The variety of pollen and nectar make for honey with more depth of flavor; with a little bitterness and acidity on top of the usual sweetness. Due to its natural antibacterial properties, this honey is untreated.
