Mainland is a New Zealand cheese maker that has been in operation for over half a century. Using only natural ingredients and milk from grass fed cows, their cheeses are carefully crafted with a core belief that “good things take time.” Their Swiss cheese is matured for two weeks at a higher temperature than normal to obtain the famous 'swiss-hole' and its slight chewy texture.
