This is a non-alcoholic crafted beverage from Australia's NON, a team of chefs & beverage experts out to rethink what might go in your wine glass. Profile: Balanced, sweet & salty. Chamomile provides lingering tannins for a floral finish. Serve - Chilled in a wine glass. Food pairing - Citrus-forward salad, creamy desserts, cured meats Process: FRUIT - 48-hour cold steep of freeze-dried raspberries, sourced from Tasmania, Australia. Freeze drying removes 85% of water molecules from the fruit, which concentrates the flavour. TANNIN - Chamomile is used for tannin & creamy finish. Raspberry skins provide a small amount of tannin. SALINITY - Murray River salt provides salinity and creates a moreish sensation. ACIDITY - Verjus from Semillon grapes from the Barossa Valley, Australia. BALANCE - Just like the kitchen, sugar is used to balance at the end depending on the natural sweetness of the raspberries. About the producer: NON was created to rethink what non-alcoholic drinks can be, not boring “mock” versions of wine or sugary alternatives, but bold, full-flavored experiences that belong at the table. Founded by Aaron Trotman after he was inspired by a refined alcohol-free pairing at a London restaurant, NON takes a culinary approach, using real ingredients and chef-style techniques to craft complex, satisfying blends. The brand isn’t trying to imitate wine; it’s carving out its own identity with layered flavors, striking design, and high quality ingredients. Ingredients list: Water, verjus, raspberries, sugar, chamomile, salt.
