









We are VERY proud to carry Girolomoni’s organic, ancient wheat pastas in Thailand. This is their Organic Durum Wheat Rigatoni. Rigatoni are large, ridge-textured tubes with square-cut ends, expertly designed to capture chunky sauces and melted cheese within their hollow centers. Made from 100% Italian durum wheat semolina, this pasta is rough extruded to create a porous surface that holds condiments perfectly. It features a savory flavor profile with mineral notes and a delightful aroma of crusty bread. Classic recipes for Rigatoni include Rigatoni alla Carbonara, where the ridges grip the creamy egg and guanciale, Rigatoni con la Pajata, or a hearty Baked Rigatoni layered with mozzarella and marinara. The slow-drying process at low temperatures ensures the pasta maintains its "tenacity" and perfect al dente bite, adding an authentic Italian character to every meal. Cooking time: 11 minutes About the producer: Gino Girolomoni was one of the pioneers of organic farming in Italy, or as he called it, restoring dignity to the land. He saw industrialization as a step backward for the health of the land, the food, and the agricultural communities that he had grown up in. Starting in the 1970s, he gave more than 500 lectures on organic & regenerative farming techniques across Italy, teaching farmers how to get the most from their land without synthetic or chemical inputs. He was one of the early advocates of growing the ancient wheat grains varieties because they are superior in nutrients and taste - not optimized for mass production. Fifty years later, there are more than 400 organic farms in Girolomoni’s “Montebello” coop, with most of them in the Marche region. They control the product from the seed and soil, into their own mill, and finally to the pasta factory where it’s mixed with their spring water to become exceptional pasta. The coop reinvests profits into further development of farmer education and agrotechnology that works in concert with the land rather than against it, and today the Marche region is aiming to become the largest “Single Organic District” in Europe.
