This is a whole pasture-raised duck from our partner farm in Khao Yai. Raised outdoors and free to roam and forage for its feed. The animals' diet is also supplemented by a corn-based feed that they can eat at will. It comes as a whole duck, frozen, including the head and feet. Guaranteed free from hormones and antibiotics. Whole ducks are great for roasting, or broken down and used as part of a hearty, flavorful stew. Why work some duck into your protein intake? Duck is a leaner, tasty animal protein alternative if you're normally a beef or pork eater. It's also a great source of minerals like iron, zinc, and vitamin B12. Cooking and defrosting suggestions To defrost, place it in the refrigerator for 24-48 hours prior to cooking. Once defrosted, the duck should be cleaned and patted dry with paper towels. Preheat your oven to 190°C (375°F) and place the duck on a roasting rack, breast side up, in a roasting pan. Roast the duck for approximately 40 minutes per KG, or until the internal temperature reaches ~73°C (165°F).
