From the highest vineyards in Limoux. The earlier harvest date enabled Thomas to pick the grapes and press the juice, before shipping up to his cave in Chablis where it was aged in cuve during the winter before bottling in April. It is a delicious well balanced wine, with ripe citrus fruits, good texture and a saline finish. For drinking now to 2018.
