Wild Orange-Spotted Grouper Filet

Wild-sustainably-caught seafood from the pristine turquoise water of Southern Thailand. Every morning, our fisherman takes his small boat out to the ocean and return within a couple hours. Because of the unique, cliff-like topography of the Andaman that makes deep water fishing more accessible, our fishermen are able to catch many varieties of abundant seafood from their short 10-mile trip. The Orange-spotted Black Grouper (ปลาเก๋าดอกแดง) is lean, moist, with a distinctive yet mild flavor. It's got large flakes and a firm texture. Perfect when pan-seared with crispy skin, or baked with your favorite crust. We love coating it with crushed pistachio and lemon zest, and drizzling with EVOO and flaky salt. Frozen ~250-300g fillet Good to note: We love our ocean friends and want to be as sustainable as possible, so you may not always get the picture-perfect center piece.
