Meet our sustainably wild-caught shrimps from the Andaman ocean. When the weather permits and the tide is high, our fisherman takes his long-tail boat out just a few meters from shore, sets up a net, and waits patiently for 2-3 hours. No trawling, no farming, no antibiotics, just fresh daily catch. Wild Tiger prawns (กุ้งลายเสือ) got its name from their tiger-like strips on their shells. They are know for its extra firm texture, and slightly sweet in taste. When cooked, the shells give out a dark orange color, almost similar to the color of lobster shells. We love simply grilling them shell-on, super high heat on our favorite cast iron pan, drizzling over with melted butter and lemon. Or peeled to make a popular Thai dish like the sweet-tangy-spicy shrimp in tamarind sauce. Good to note: Our shrimps are packed in water before freezing to preserve the maximum level of quality to freshly caught shrimps. (packing directly into vacuum bag can cause freezer burn) To prep: defrost overnight in the fridge, or place in water bath for 30 mins. 5-6 count per pack, frozen, shell and head on. Feeds one hungry person.
