Wild Yellow-streaked Snapper Fillet

Every morning, our fisherman takes his small boat out to the ocean and return within a couple of hours fishing for wild red snapper. Because of the unique, cliff-like topography of the Andaman that makes deep water fishing more accessible, our fishermen are able to catch many varieties of abundant seafood from their short 10-mile trip The particular species of Yellow-streaked Snapper (ปลาจวดแดง) has a very similar taste to the popular mullet fish, at a more affordable price. They are perfect pan-seared with some herb butter or included as protein with a cauliflower rice dish. The ones we get in particular is treated with a technique called "ikejime" by local fishermen, which helps preserving their extra clean and flavorful taste.
