Chipotle Cooking Sauce - La Fundidora

Pastor Cooking Sauce - La Fundidora

A green salsa made with fresh tomatillos and select serrano chiles.

Key notes: Refreshing and vibrant.

Pairs well with: Fish, grilled veggies, chorizo and enchiladas.

Ingredients
Tomatillo, white onion, cilantro, serrano chile, sea salt.

About the producer:

La Fundidora was founded in Brooklyn by two Mexico City natives that missed the authentic flavors of home.

They were disappointed by mass-produced, watered down salsas that lost the true essence of salsa, one of the world’s best condiments!

At first they were making batches at home for friends and family until local restaurants encouraged them to start selling it to them - and La Fundidora was born.

They’ve moved production to Mexico but they still produce their salsas & cooking sauces in small batches with super fresh ingredients and none of the preservatives, emulsifiers, seed oils, needless acidifiers, or ‘natural flavors’ you’ll find in the supermarket brands.

In other words, these are the real deal - just want you’d find in a Mexican home.

Not overly spicy like a hot sauce, rather, each has a unique flavor profile that brings out the best in the unique Mexican ingredients - almost all of which you cannot find in Thailand, either in raw ingredient or even in finished products.

Try them all and find your new flavor partner for everyday meals from the obvious chips & salsa or tacos but also with eggs, meats, veggies, or in your cooking.

A uniquely black salsa hand-crafted with charred jalapeño and mora chiles.

Key notes: Robust earthiness with undeniable smoothness and warmth.

Pairs well with: Chicken, fish and grilled veggies.

Ingredients
Charred tomatillo and jalapeño chile, mora chile, garlic, white onion, sea salt.

The quintessential Mexican chili pepper. It infuses foods with subtle warmth and unmistakeable smoke.

Pairs with: Beef, pork, poultry, mushrooms and roasted veggies.

We recommend a "low and slow" approach like a braise or slow cooker. Brown your meat first, drop it into a braise or slow cooker with this sauce and a bit of stock or water, and thank us later.

Also great as a marinade for faster cooking methods, or even mixed into an egg dish. Lots of great ways to bring the classic deep & smoky chipotle flavor to your cooking.

Ingredients
Ripe red tomato, home-made vegetable stock (onion, carrot, celery, bay leaf, parsley), white vinegar, soya sauce, white onion, honey, olive oil, chipotle mora chile, garlic, mustard, salt.

Pastor tacos are what originally put Mexico City on the culinary map. A distinctive mix of chillies and spices gives this cooking sauce a characteristic bright red hue.

Pairs with: Pork, poultry, fish, beef and tofu.
