We at Paleo HQ realized recently that we didn’t have a strong, real food chicken soup in our lineup to turn to when life just calls for a simple, well-executed chicken soup - but you don’t want to turn to a canned product stuffed full of preservatives that have been on the shelf for years.

So we asked Chef Andrew, our executive chef, to create one.

He came back with a delicious, Mediterranean-inspired soup that is great to have in the freezer to pull out for a rainy day, when you’re a bit under the weather, or when you just want a great bowl of chicken soup.

This soup is packed full of shredded pasture-raised chicken meat as well as the other staple ingredients of a good chicken soup: broccoli, cauliflower, potato, onion, carrot, and celery. The added oregano, lemon, and dill give the dish a very pleasant overall flavor profile.

Pig's feet are used in many cultures (widely used throughout Europe, Asia, Mexico and parts of South America), especially in areas where people have learned to cook and eat all the parts of the animal. Pig's feet is a great way to add body to soups, for stews which are served on its own or barbequed like they do in the south of the USA. 

It's an old school, soul food favourite where the feet are bbq'd to perfection smothered in a BBQ sauced making tender meat that literally melts in your mouth when it touches your tongue. Goes great with southern classics such as cornbread or mac n' cheese (we'd recommend trying with Paleo alternatives such as creamed potatoes and collard greens).

Since this cut of meat has so much connective tissue and thick skin, you must cook it low and slow so the meat becomes tender. This may be from 2-1/2 hours in soups and stews or 3 hours if they are to be boned. Pig feet are often fried or broiled lightly brown before going on to the simmering stage.
Some French recipes call for simmering slowly for 6 hours (or even more) before boning, but I find this excessive and have no trouble removing the bones after 3 hours of simmering.

Pig feet are low in fat and (the edible parts) are very high in protein, particularly Collagen in tendons and skin. This is very good for joints and skin health.

Our Pig's Feet are from the hind legs - those from the front legs are small and mainly used to produce gelatin. Pig feet have very little fat and are almost all bone and protein.

Homemade wild salmon bone broth from organic veggies and wild-caught Alaskan salmon bones and skin. Simmered lightly for 3 hours together with vegetables for taste. Then the broth is then strained and kept in the fridge overnight. 
 
In the morning the fat is scraped off from the top and what is left is a clear tasty broth. Our wild salmon bone broth is sold frozen in 500ml Vacuum Bags.

Since salmon is not a white meat fish, the flavour at thick concentration would be a bit 'fishy' so our chefs perfectly balanced the broth with herbs and just enough water for a very tasty liquid that is ready to drink right out of the pack. Since the collagen is relatively lower compared to our other broths, we priced this broth at a very friendly price :)
