This is a native breed of chicken called Tao Pan Tong. Compared to the broiler breeds you find at the supermarket, the native breed has a more concentrated “chicken” taste and tends to be juicier.

 About the producer and our organic chicken bones

Tan Khun Organic Farm is one of only two farms in Thailand that raise certified-organic chickens. We’re proud to have their products not only for the quality of the pasture-raised chickens but also the ethos of the farmer, Khun Amnart Reansoi.

Khun Amnart is a second generation farmer who completed a master’s degree in animal agriculture from Kasetsart University’s Ratchaburi campus before working for a large food conglomerate in Thailand and China. This experience led him to want to start an organic farm to raise chickens that are both healthier for the consumer and a positive contributor to local ecosystems - both animal, plant, and soil.

K Amnart practices crop rotation to encourage more nutrient-dense soil and feed products for his animals and is one of the leading voices in the small but growing community practicing regenerative agriculture in Thailand.

He raises broiler chickens as well as a native breed called Ta-pao-thong (ตะเภาทองเกษตรศาสตร์) which has been been in Thailand for more than 200 years, originating in China.

We visited K Amnart at his farm in 2021 and are thrilled to support a farmer with shared values and a mission to educate other farmers about regenerative agriculture and higher-integrity food.

In Japan, these noodles are often served cold, or even in iced water with a dipping sauce.

Family-owned <a href="https://hakubaku.com.au/about/">Hakubaku</a> is the leading supplier of organic noodles in Japan and is known for exceptional quality, insisting on organic production to honor the true taste and quality of traditional noodle production.

In the late 1980s - after searching for years for the right location - Hakubaku moved production to Victoria in southern Australia due to the very high quality of organic wheat that grows there...which makes the best noodles! Now they employ hundreds in the small town of Ballarat and send their noodles all over the world.


Cooking instructions: 
Cook organic somen in rapid boiling water for 2 minutes (salt or oil not needed).
Drain, then rinse well with cold water. Drain again.
Hint: To reheat, briefly submerge in hot water.

These are femur bones from 100% grass-fed cows from O'connor's farms in lush southern Australia. The marrow inside is super flavorful and nutritious - one of the healthiest things you can eat!

Here are the two ways to get all that nutritious goodness:

1) roast them with the open side up for about 20 minutes for a rich marrow spread that you can serve over bread, vegetables, or meats

2) make your own bone broth (alternately for broth, check out the "cross cut" we also offer which is the same bones but cut cross-wise so they're easier to use in a pot)

Grass-fed beef develops its flavor and nutrient profile directly from the pasture on which the cattle are raised, and southern Australia has some of the most lush, nutrient-rich pastureland in the world.

It’s here in southern Victoria’s temperate climate with regular rainfall, super clean air, and abundant healthy soil that the Angus and Hereford breeds thrive, unlike the more arid regions in the middle and northern part of the country.
