Carnitas are an extremely popular Mexican dish that originated in the central part of that country. We take the loin & belly cuts of our pasture-raised pork - both the lean and fatty cuts - and braise them with a variety of smoky Mexican spices (a mix of cumin, coriander, paprika and others) until the meat falls apart. We then pull it apart into bite size shreds and serve it with pickled onions, a spicy & tangy green jalapeño sauce, and baby spinach. Buen gusto!
