An upgraded version of lamb rendang, one of the famous flavors of Southeast Asia, coming originally from Indonesia. Why do we call it upgraded? Because we make the curry paste ourselves, in-house, using only paleo-approved ingredients - which means we replace lots of the commercial-grade ingredients you might find at a street stall or restaurant (e.g. MSG, preservative-laden shrimp paste, and refined sugars) and instead use organic coconut oil & milk, pasture-raised NZ lamb, and pasture-raised duck eggs. The result is a super rich and flavorful curry with tender lamb meat that melts in your mouth and doesn't leave with a crash or feeling lousy afterwards from cheap oils or additives. Served with our cauliflower rice, which we cut specially with desiccated coconut for this dish; this pairs very well with the curry.
