We make this ground beef in house from 50% chuck beef and 50% topside. We grind the whole cut and pack them in vacuum bags without adding anything to it. The chuck and topside we use comes from Prime Steer Silver Fern cattle, which are of course pasture-fed. No added fat from the organs or other parts of the cow.
