This is a "thick cut" of 100% grass-fed wagyu striploin (marble score 4-5) from First Light Farms in New Zealand, the first group of farmers to ever raise wagyu on exclusively grass. The striploin cut (also known as New York strip) is a good balance of flavor and tenderness, with the "strip" of fat at the top contributing flavor but overall having less fat (and more flavor driven by the meat) than some other cuts like ribeye. It's also a bit more budget friendly. Our grass-fed wagyu striploin are cut into approx. 260g steaks. Flash frozen at the source, these will defrost beautifully overnight in the fridge.
