The result is a rich, mellow flavor that stands apart from your standard, mass-produced soy sauce. This is their signature kikubishio, made from black soybeans from Tanba in Kyoto. The name "Kiku" means "chrysanthemum," symbolizing nobility and elegance in Japanese culture, while "Bishio" translates to "condiment."
