We wanted to make it easy to have a gourmet roast chicken experience at home...and now you can! 🐓 We start with our bestselling pasture-raised chickens from Khao Yai, and then: - debone them (except the drumsticks) - butterfly them - this means we cut it down the middle, and open it flat like a book - season very lightly with salt and pepper - cook them in the sous vide until perfectly cooked throughout - ...and then flash freeze them! Because the bird has already been perfectly cooked (by sous vide), you don't have to worry about over or undercooking it. All you have to do to finish it is pop it in the oven until it has that crispy, golden brown skin.  Full reheating instructions: - Defrost completely overnight or under running water. You don't want anything partially frozen still. - Pre-heat the oven to 200c with the fan on high. - Remove the chicken from the bag and pat dry the skin. This is important to get that golden crispy skin. - Place on a baking tray (or roasted vegetables). Optional - lightly brush the skin with extra virgin olive oil, which will also help make a crispier skin. - Put in the pre-heated oven for 20-25 minutes. This whole chicken will feed 4-5 adults (or 3 big eaters). -- About the chicken: These chickens come from our partner farm outside of Khao Yai where they are raised on a shady, gently-sloping farm at the base of a mountain. (See the pics from our summer 2021 visit.) The birds are free and unrestricted for their entire lives to roam about the farm and forage for bugs, worms, termites, ants, and more. They also have access to shade tents & shelter if they wish. In addition to foraging, they also have access to feeders which are stocked with a rice bran and corn-based feed, from which they get approximately 30-40% of their calories. As a high-protein treat, they are also given supplementary crickets a few evenings per week, which they love. They do not receive antibiotics or growth hormones at any time in their lives - they don't need them! These chickens are a sturdier breed than the fragile, but very fast-growing breeds used by mass market chicken providers. (Those birds reach maturity at only 30-35 days, compared to 45-50 or more for our chickens.) The end result is a lean, good-sized, and nutritious pasture-fed chicken breast with a very subtly more gamey flavor.
