Meet our sustainably wild-caught banana shrimps from the Andaman ocean. When the weather permits and the tide is high, our fisherman takes his long-tail boat out just a few meters from shore, sets up a net, and waits patiently for 2-3 hours. No trawling, no farming, no antibiotics, just fresh daily catch. Wild Banana Prawns (กุ้งแชบ๊วย) is mild in flavor, sweet, and semi-firm. In comparison to Tiger prawn, Banana prawn has thinner shell, and sweeter notes. We love cooking them shelled-on for the extra sweetness. Perfect for shrimp cocktail, classic shrimp scampi, or the famous Thai stir-fried with shrimp paste and bitter(aka stinky) bean. Good to note: Our wild banana shrimps are packed in water before freezing to preserve the maximum level of quality to freshly caught shrimps. (packing directly into vacuum bag can cause freezer burn) To prep: defrost overnight in the fridge, or place in water bath for 30 mins. 8-10 count per pack, frozen, shell and head on.
