INGREDIENTS
For the beef
2 piece (240g) grass-fed Striploin or Ribeye steak, trimmed of excess fat.
1 teaspoon freshly ground black pepper
1 teaspoon salt
1 tablespoons extra virgin olive oil (for cooking)
For beef fat garlic fried rice
700g warm steamed rice
2 tablespoon beef fat (or tallow)
3 clove garlic, thinly sliced
2 tablespoon organic soy sauce
1⁄2 teaspoon salt
1⁄2 teaspoon freshly ground black pepper
2 tablespoon spring onion, chopped (optional) Sprinkle of white & black toasted sesame
HOW TO MAKE IT
How to cook beef
• Pat dry – use paper towels to pat the steaks dry to get a perfect sear and reduce oil splatter.
• Season generously with salt – just before cooking steaks, sprinkle both sides liberally with pepper
• Preheat the pan on medium and once hot add oil.
• Sear steaks – add steaks and sear each side 1-1.5 minutes until a brown crust has formed then use tongs to turn steaks on their sides and sear edges (30 second per edge). Total cooking time: ~3 minutes for 1.5cm thick.
• Remove steak and rest 10 minutes before slicing against the grain.
• Keep fat from the pan to make garlic fried rice.
TIPS : how long to sear
For a 1-inch thick steak, the beef should cook for about 3-4 minutes on each side for medium rare on a relatively high heat gas stove.
• Medium Rare (soft, dark pink inside): 51-53°C
• Medium (soft, some pink inside): 54-57°C
• Medium Well (very firm, no pink inside): 58-60°C
How to cook fried rice
• Slice cloves of garlic thinly.
• Heat the beef fat in a large frying pan over low-medium heat.
• Add the sliced garlic to the pan and cook gently for a few minutes until golden brown. Use a slotted spoon to transfer the garlic onto a dish lined with kitchen paper towel and set aside for serving.
• Add the rice to the pan and stir to coat with the beef fat.
• Add organic soy sauce to the pan from the edge and stir to distribute evenly.
• Season with salt and black pepper to taste.
• Add chopped spring onion and mix well with the rice.
• Transfer the garlic fried rice to a plate and sprinkle with the fried garlic on top for serving.
Optional: you can also add Grass-fed beef strips and chopped onions or red peppers to the pan while cooking the rice for added flavor and texture.
